The juniper berries offer a slightly piney flavour with a touch of both fruitiness and pepperiness which accentuate the spicy phenols of the saison yeast.
The freshly grated lime brighten it all up to make this a deliciously big beer.
We actually made a version of this beer the year before we started doing the Unfiltrd Project, one of the first ones we collab’d with Matt on after he started at the brewery – so it’s time we brought it back!
