We brewed a traditional Berliner weisse base, upped the grain additions to get to 5.0% (instead of the traditional 2-4%), and let it sour in our kettle overnight at the brewery. Once the desired acidity was reached, the beer was boiled and hopped with Mandarina Bavaria hops for a light tangerine note. We then took some beer out of the tank that would become Doubweisse, and then heavily dry-hopped the main batch with more Mandarina Bavaria and Motueka for more orange and tangerine notes leading to a clean, crisp finish.
