Spon is an exquisite blend of our finest barrels from our Traditional Spontaneous program, combining a barrel each of our oldest and youngest beers. Created through a meticulous process of a traditional turbid mash and an extensive 4-hour boil with aged hops, the wort is then left to cool overnight in our coolship. From there, each beer is transferred to barrels for a slow and precise natural fermentation, with the first barrel brewed in December 2021 and the second in March 2023, resulting in an average age of 17 months upon packaging.
