We’ve added all the juice to this new IPA. For this edition, we are experimenting with a new yeast strain that enhances thiol character as well as eliminates diacetyl production. Thiols are flavour compounds that can be described as passionfruit and guava-like. Diacetyl is the buttery flavour that yeast is able produce especially with heavy dry hopping rates. We’ve matched that with Citra, Riwaka, and Luminosa for notes of guava, melon, and pink grapefruit.
