Collective Unconscious - Mango Barrel Aged Sour
Fermented exclusively with our house culture of wild yeast and bacteria which was developed over the several years leading up to opening our brewery. Fermented and conditioned in our solera tank for over a year and then bottle conditioned for over 4 months. Conditioned on a hundred pounds of mango puree in our burgundy wine barrels for over 3 months.
