Process & tasting notes: 

This year was blended from three wine barrels of saison, brewed with Canadian pilsner malt, buckwheat and spelt, hopped with Czech and New Zealand hops.
The aroma is like slicing the cheek off a peach from the farmer’s stand in late August; delicate stone fruit, with some light floral notes of gardenia and jasmine that we attribute to the specific variety of peaches we work with.
The 1 to 2 years aging in wine barrels contribute light vanillin with a hop bitterness that accentuates the tannic bite of peach skin.
The entire blend is a beautifully nuanced reflection of our love for this Ontario-grown peach.
