Dance Upon Plums | 6.2% | 750 ml | Aged Gose on Golden Plums

In cool summer orchard, swole fruit hangs gold, plucked ripe and spiced, cast into the sea, where small friends you cannot see, revel and dance upon plums.
Process & tasting notes: Dance Upon Plums is our second vintage of an aged gose on golden plums, and our fifth year using Early Gold plums from Greenlane Farms in Beamsville, Ontario.

We ripened 300 kilograms of golden plums in our brewery for three days until they reached their aromatic peak – perfuming the entire brewery with plum candy.
We selected five barrels displaying a mix of lemony acidity, vanilla-oak, clean Pilsner malt, and a dry, herbaceous noble hop character to referment the plums and then rest on the fruit for three months.

The fruited beer was then infused with Mediterranean Sea salt and Indian coriander seed, giving our already lovely plum beer extra layers of citrus aromatics.
