On a small beach, splitting fruit by hand, skin blushed rose-gold and velvet under thumb, washed in salt breakers, sharing two perfect halves, of apricots under rolling foam.
Process & tasting notes: Apricots Under Rolling Foam is an aged gose on apricots for four months.
Similar to the 2024 vintage of Each Apricot Made Gold, we aged barrels of beer on whole apricots without removing the pit to express aromatics of almond and marzipan.
The decision to add sea salt and coriander seed came late in the process, elevating an already phenomenal beer into something stellar.
The star of the blend is the apricot aromatics, supported by a competent roster of barrel character, salinity and herbaceous-citrus aromatics.
