Process & tasting notes: Acres of the Mind is a blend of high-wheat beers spiced with Indian coriander and sweet orange peel.
The idea of a farmhouse wit beer came from a desire to see a drier version of the beer style that incorporates fruity Brettanomyces aromatics into the classic addition of coriander and orange peel.
The beer we blended was made up of five barrels aged for eight to 18 months displaying European hop aromatics.
The resulting beer is a balance of pillowy wheat and spelt body, citrus and funk aromatics, and light acidity with a refreshing bone-dry finish that nods to its time in oak.
